For The Cupcakes

  • 240g almond flour
  • 130g erythritol or Swerve confectioners sweetener
  • 1 tsp bicarbonate of soda / baking soda
  • ½ tsp baking powder
  • 3 large eggs
  • 280g plain Greek yoghurt
  • 1 tsp vanilla extract
  • 8 sugar-free Reese’s peanut butter cups

For the Frosting:

  • 6 tbsp softened unsalted butter
  • 6 tbsp erythritol or Swerve confectioners sweetener
  • 2 tbsp cocoa powder
  • 2 tbsp natural keto-friendly peanut butter
  • 2 tbsp double cream / heavy whipping cream
  • ½ tsp vanilla extract

How To Make Keto Reese’s Peanut Butter Cupcakes

  1. Preheat the oven. Preheat your oven to 180°C / 350°F and line 8 sections of a muffin or cupcake tin with cupcake liners.
  2. Make the cupcake batter. Add the almond flour, erythritol, bicarbonate of soda, baking powder, eggs, Greek yoghurt, cocoa powder and vanilla extract to a large mixing bowl.
  3. Mix until smooth. Combine everything well by hand or with a mixer until the cupcake batter is smooth and creamy with no obvious lumps.
  4. Half-fill the cases. Spoon the batter into the cupcake liners, filling each one about halfway.
  5. Add the peanut butter cups. Gently place one sugar-free Reese’s peanut butter cup into the centre of each half-filled cupcake case.
  6. Top with the remaining batter. Use the rest of the cupcake mixture to cover the peanut butter cups and fill the cases.
  7. Bake. Place the tray on the middle shelf of the oven and bake for 15–20 minutes, or until a skewer inserted into the cake part comes out clean.
  8. Cool completely. Remove the cupcakes from the oven and allow them to cool fully before adding the frosting.
  9. Make the frosting. Mix the softened butter, sweetener, cocoa powder, peanut butter, double cream and vanilla extract until smooth.
  10. Decorate and serve. Spoon the frosting into a piping bag and decorate the cooled cupcakes however you like.

Cupcake tin

Use an 8-hole muffin or cupcake tin to help the cupcakes bake evenly and keep their shape.

Cupcake liners

You’ll need 8 cupcake cases for this recipe. They make the cupcakes easier to remove and serve.

Large mixing bowl
